In the spirit of Christmas what better to share with you than a mince pie.

I didn't blind bake the pastry first but added the filling straight away and then popped it in the oven.
The apples were a lovely dessert apple which came off a friends tree and the mincemeat is one I made myself...you can find that recipe here.
Being a large tart the apples added a little more depth and made it not too rich. Lovely!!
